Good Food on Every Table posted a story on Sept. 16 highlighted the scheduled celebration of the heirloom Beaver Dam pepper at Chicago’s Green City Market today (Sept. 20). The story described the efforts by food artisan Lee Greene, owner of the Scrumptious Pantry line of prepared foods, to revive the use of delicious but mostly forgotten heirloom varieties of vegetables and fruits — something that is also being done by farmers and Good Food entrepreneurs across the nation.
Collaboration among artisans and producers is a big part of this movement, and Good Food on Every Table attended the Beaver Dam pepper event and produced this photo essay showing how several of the food stands participating in the event incorporated the pepper into the foods they sold at the market.
These included Zullo’s fried cheese curds (from Wisconsin’s Nordic Creamery in the adjacent stand); River Valley’s Heirloom Tomato and Sweet Corn tamales; two different preparations of crepes at Abby’s Crepes; a Beaver Dam Good Grilled Cheese at Gayle’s Best Ever Grilled Cheese; peach pie and peach turnovers at Hoosier Mama Pie Company; and shrimp and Beaver Dam pepper tacos at Cookies and Carnitas.
